I've done some jerky in the past. I've shared with humans and pups. This time around though, we've got about 10 lbs of liver in the freezer and not much taste for it when you also have the half of cow. I decided to make thank you gifts for Dad and Pam as they will be caring for Molli while Phil and I head to a graduation. I've wanted to try this and Molli loved it. It is natural, an extension of our farm. With the recall of dog foods, it made sense to not buy treats which might not be very good for their long term health.

I don't have lots of download speed, so I got the pdf with all steps and made a few adjustments.
We are using a combination of cow liver and tongue. It would have been best to make these right from the fresh meat, but we will be thawing this. We raised the meat and the calf came to us locally and was butchered in Belen, NM. This means we know that no pesticides were used on the feed the cattle ate. The liver is a detoxifier for the body. The less toxins, the healthier meat.
First we are partially defrosting the liver and cutting it into tiny chunks. The little bit of freeze in the meat helps you to keep the pieces uniform. Sizes should be consistent about 1/2" x 1/2". Place large pot on stove with water to fill about half the pot. Bring to boil. Add the liver and be sure that liver is covered. Bring to boil and boil for 5-6 minutes and remove from heat. Immediately remove the liver pieces into a colander to drain. The cats get the cooled water.
When cooled to touch, you can begin to cut the liver into 1/4" pieces for dehydrating. Each piece is transferred onto a dehydrating tray that has been cleaned and dried. Dehydrate for 2 hours depending on the humidity. Dry to snap to pieces. Package and label. Shelf Life ....4 months if you can keep Molli away.
